Livestock and Meat Evaluation (AG181)

Integrated approach to live and post-harvest evaluation, grading and selection of meat ani mals. Focus on beef, pork, and lamb species. Emphasis on criteria necessary for assessin g economically relevant livestock traits for value determination. Evaluation of meat prod uct merit will be discussed, in addition to a nalysis of proper selection procedures for br eeding, feeder and market animals to produce meat products that meet industry demands.
