Livestock and Meat Evaluation (AG 181)

Integrated approach to live and post-harvest evaluation, grading and selection of meat animals. Focus on beef, pork, and lamb species. Emphasis on criteria necessary for assessing economically relevant livestock traits for value determination. Evaluation of meat product merit will be discussed, in addition to analysis of proper selection procedures for breeding, feeder and market animals to produce meat products that meet industry demands.
